I have a rather difficult time surviving the hours between lunch and dinner. I get extremely cranky and irritable. Which makes perfect sense, because It is actually better for you to eat small meals throughout your day (about every 2-3 hours), and try not to go long periods of time without refueling your body. I need to get myself and a couple of my daughters that shirt that says, "Please forgive me for what I said when I was hungry!" Low blood sugar problems run rampant in this family. So sometimes, I reach for unhealthy things because it is quick and easy. However, I am trying to put an end to this. Lately I have been trying tasty, healthy low-carb snacks. Here is one I love! It's not low-fat, but it is high in protein and flavor.
Shredded cheese (parmesan, romano, Jarlsberg); works with any kind of shredded hard cheese. The exact cooking time will vary depending on how much water the cheese contains, so watch the pan carefully. And make sure you turn on the fan, because pan-fried cheese makes smoke.
Heat a nonstick skillet over medium-high heat. Have a plate lined with paper towels waiting on the counter next to the stove.
Make three or four small circles of cheese in your pan by scattering a generous pinch of shredded cheese for each. You want the cheese spread out, not piled high; this will make the crisps lacy and thin. When the edges start to brown (about 30 seconds), carefully flip over each circle with a thin metal spatula. Cook another 20-30 seconds, then remove the crisps and let them drain on the paper towels.
I like to garnish with a small dollop of sour cream and several jalapenos. Or, another way I like to make them, is by adding red bell pepper flakes as they are cooking. I love spicy food!
