Turkey Pitas

Turkey Pitas

  • 1 pound ground turkey

  • 2 tbsp allspice

  • 1tbsp cumin

  • 1 tsp oregano

  • Salt and pepper to taste

  • 1 cup chicken stock

Tzatziki Sauce

  • 16 ounce plain Greek yogurt 

  • 1/2 cup light sour cream

  • 1 small English cucumber

  • grated Zest of 1 lemon

  • Juice of half a lemon

  • 1 tbsp red wine vinegar 

  • 1 finely diced clove of garlic

  • 1/4 tsp of cayenne pepper (optional) 

  • salt and pepper to taste

 

To Prepare the Meat
Brown the turkey meat in a skillet until browned well and cooked through. Add the spices and cook about 3 minutes.
Add chicken stock and scrape up any brown bits on the bottom of the pan. Simmer until all the chicken stock has reduced.

To Prepare the Tzatziki Sauce
Grate the cucumber, lightly salt it and let it drain in a strainer. Mix all other ingredients together in a bowl. 

Squeeze out all the excess water from the cucumber with hands or in a clean kitchen towel, then mix with the yogurt mixture. Serve with pitas, diced red onion, tomatoes, cucumber and feta cheese.
