Sister Susan's Summer Salad

You can call it what you want, but I call it, "My Sister Susan's Summer Salad!"  Say that three times in a row!  This is great for those warm summer days, and it's very healthy.  If you don't have your own garden,  try to visit a local farmer's market to purchase these ingredients.  It just taste so much better.             

1 cup water

1/2 cup distilled white vinegar

1/4 cup vegetable oil

1/4 cup sugar or Splenda (to taste)

2 teaspoons salt

1 tablespoon fresh, coarsely ground black pepper

3 cucumbers, scrapped with a fork so some of the skin is left on and sliced 1/4-inch thick

1/2 cup red or green bell peppers

3 tomatoes, cut into wedges

1 tablespoon chopped garlic

1 cup broccoli tips

1 onion, sliced and separated into rings

Whisk water, vinegar, oil, sugar, salt, and pepper together in a large bowl until smooth; add cucumbers, tomatoes, and onion and stir to coat.

Cover bowl with plastic wrap; refrigerate at least 2 hours.  However, it is even better if it sits over night.  *Recipe By Susan Farley
